Ingredients

  • 8 corn tortillas
  • 1 1/4 cups chicken broth, divided
  • 2 tablespoons olive oil
  • 1 cup frozen chopped onions
  • 1 cup frozen chopped green pepper
  • 1 1/2 tablespoons minced garlic
  • 1 (8-ounce) package fresh sliced mushrooms
  • 1 pound ground turkey breast
  • 2 cups plain yogurt
  • 1 (15-ounce) can diced tomatoes
  • 3 tablespoons fine flour (recommended: Wondra Flour)
  • 2 tablespoons chili seasoning
  • 1 (15-ounce) can artichoke hearts in water, drained and chopped
  • 1 1/2 cups organic shredded jack cheese
  • 1/2 cup crushed baked tortilla chips

Directions

Preheat oven to 350 degrees F.

Place tortillas in a pie plate with 1 cup broth. Turn once in awhile to ensure all tortillas are soaked, set aside.

Place a large nonstick skillet over medium-high heat and add olive oil. Saute onions, peppers, garlic and mushrooms for 5 minutes until slightly browned. Add turkey and cook until turkey is cooked through, about 7 to 9 minutes. Add remaining 1/4 cup chicken stock and remaining ingredients, except cheese and tortilla chips. Stir thoroughly and bring to a boil. Reduce heat and simmer for 5 minutes.

Place 4 soaked tortillas in the bottom of prepared baking dish, tearing to fit. Layer half of turkey mixture and half of cheese. Repeat layers. Top with crushed tortilla chips. Place in oven and bake for 30 minutes.

    This recips sounds good, especially with the exttra twist of adding the artichokes and yogurt. But, it needs something like... green chilis added to it. It lacks in flavor and spice. I am not a huge fan of really spicy foods, but this needs an extra kick and added flavor. Kind of boring tasting.Read more

    I made this tonight and after a substantial list of modifications, it tasted alright. I switched sour cream (fat free) for... the yogurt, used Rotel instead of the tomatoes, cut the mushrooms, and added a lot of ground cayenne and cumin. The presentation was severely lacking... It looks like a dog half-ate a burrito and threw it up on your plate. I'm not sure what to do to give it some shape, but I had to start with "I know it looks terrible but..." I wouldn't bring it to a party, but it's ok when you're eating by yourself and you can just tell others that you had a decent frozen dinner.Read more

    Agreed - a few tweeks needed but quite tasty

    Overall, I enjoyed this recipe but found it a bit bland, even after adding some extra chili powder and cumin. My husband and... I solved this issue by using some medium salsa on top. I think switching the yogurt to perhaps part sour cream would also enhance the flavor. I also like the suggestion of keeping out the artichokes (which I didn't actually mind) and using olives instead. I also think some green chliis would be a n ice touch It didn't come exactly how I expected, but I think it could turn into an excellent dish with a few small changes. I also think that it would be a good potluck dish - as you really get alot.Read more

    This recipe is not tasteful and very strange. It was wasting of products since we could not eat this. I do cook a lot and... even I added more spices to it, it just is a terrible dish. Sorry.Read more

    I make it just as the recipe says except for the addition of a little cumin. It doesn't need anything else! My husband and I... love it; and for huge fans of Mexican food, that's really saying something.Such an unexpected pleasure for all the low fat ingredients!Read more
