This cake was really great!! I used lemon zest instead of orange zest becasue I didn't have an orange and it turned out delicious. My mom, dad, and friend thought it was great and it did not last very long because everyone was eating it very quickly. I found that I didn't need the coolwhip because the cake was perfect on its own. So if you don't want to spend the extra money on coolwhip, you don't need to!

I made this cake for a pot luck and it was a hit. I didn't have orange extract so I used a little orange juice and extra orange zest. The potluck was a luau theme, so instead of the mint in the center I filled it with the cake pieces, topping and then sprinkled the whole cake with shredded coconut. Would definitely make this again.

This one is a keeper. It comes highly requested in the spring and summer months because it is so light yet satifiying. Even my kids enjoy it. So easy to make, I've even made it as a trifle.

It smelled wonderful while baking, the flavor was really good. Next time I won't put the mandarin oranges in the batter, only on top of whipped topping as a final touch- the oranges are way too heavy for angel food cake (yes, I followed the directions and when inverted, the inside of the cake fell out! Bummed but will try again with small alterations to recipe- should be great the next time!
