Ingredients

  • 1 (20-ounce) can crushed pineapple (recommended: Dole)
  • 1 (11.5-ounce) can papaya nectar (recommended: Kerns)
  • 2 tablespoons frozen limeade concentrate
  • 1 teaspoon coconut extract (recommended: McCormick's)
  • Sprigs of mint

Directions

Mix together all ingredients in a 9 by 13-inch glass baking dish. Freeze overnight (or at least 6 to 8 hours). With a fork, scrape frozen mixture until it reaches shaved ice consistency.

Scoop into bowls and serve garnished with a sprig of mint.

    Have not tried this but just read the reviews to see how it went over with everyone at home. In the show she did say to STIR... THIS EVERY HOUR WITH A FORK SO THAT IT DOES NOT FREEZE SOLID. I can see how that would be an awful outcome if it wasn't noted in the recipe. Seems easy enough. Will put in my book for next summer! I gave it 5 stars because it does SOUND great.Read more

    MUST SHAVE ICE WITH FORK EVERY HOUR OR SO....

    This wasn't noted in the recipe, but on her show, she mentioned that each hour, you need to shave the mixture with a fork to... prevent it from freezing into one big chunk. VERY important. I don't know how that got looked over. But it's getting a five star rating, because the taste is great!!!!!Read more

    The taste was ok

    but the extract added funny flavor. Chipped off chunks with an ice pick to serve, as a fork was out of the question.

    IMPOSSIBLE

    Impossible to fork this to a shaved ice consistency. It's frozen solid and has pineapple chunks in it. Either smash it into... pieces or make a real granita by stirring it with a fork every 1/2 hour as it freeses so it will have the consistency of soft shaved ice.Read more
