Delicious! I made it with pan-fried Penzey Arizona spice chicken, added black beans & skipped the cheese (mixed the salsa into the sweet potato mash. My only complaint is that I was halfway into it before I realized the yield was only 2 servings.

Really great for leftover turkey--we used apple hickory smoked turkey breast. The sweet potato was a little bit overwhelming for the other flavors so next time I'll add a little bit less. I modified the chipotle mayo a little bit and it was still excellent (no sour cream around so needed an alternative.
