    This is a simple Gravy, very easy, If you like the gibblets, chop fine an add the the gravy as it cooks. add stock if you need more, But balance it with thicken. Salt and pepper to taste.

    It is about as simple as they come and with some foresight, will not turn out poorly. If using a fresh, free range turkey, anticipate less fat drippings and plan to supplement accordingly. I have tried preparing it many different ways and the amount of drippings left always seems to determine the taste and consistency.

    I've read the comments that slam this recipe but it follows the criteria for a good gravy - I watched Sandra make it on TV and it sounded delicious and it made total sense - I don't see how it could be that bad! There were a couple of mistakes in the ingredients - it should have read that you used pan drippings from her Thanksgiving turkey that had vegetables (celary, carrots, onions underneath the turkey as it roasted - that's the key to the flavor. If you didn't use that broth then you wouldn't get the full essence of the gravy. I plan to use her turkey roasting method and her gravy recipe as I think it uses more of the real turkey flavor and less artificial flavor - I'll let you all know how it turns out.

    I think the top line of the instructions has an error. It says to place drippings from turkey in a container and let COOK slightly. It should say COOL slightly. In any case, I made my own gravy because I thought the poultry seasoning would be too salty.
