    I made this soup tonight because I had some left over tortellini and it is DELICIOUS! So fast and easy to make. I also added cut up meatballs I had left over to the soup for my husband is a meatlover. My only concern is the typo regarding preheating the oven for 375 hahaha but I guess accidents happen. Regardless, I give this recipe 5 stars as this is a Fantastic quick weeknight dinner :o

    This soup was absolutely delicious! I had to improvise on some of the ingredients because I couldn't find them in the store, so I used can white beans instead of cannellini beans and I had to use a package of frozen tortellini in sauce with veggies, and I used a little more beef broth since some of the reviews were saying it was watery . It was amazing my family loved it even my 2 yr old who is picky about veggies. I took it to work the next day for my coworkers and they loved it, even asked for the recipe. Thank you so much for this, I will definitely make again.

    I was so excited to try this soup. I followed the recipe as written except for the Italian seasoning. I just made a combination of rosemary, thyme, basil, and oregano. I was surprised by the amount of heat that the red pepper flakes gave the soup. It wasn't too hot but nice and warming. The heat did increase the next day when I reheated the leftovers.

    Both my husband and I enjoyed this soup. My husband's only comment was that he found the broth to be a little too watery. I think the next time I make this I will just double the beef broth.

    Soup was very easy to make everything you always have handy in your pantry. Yes I would make it again.it smelled so good and tasted great.

    This was one of the easiest italian dishes I have made. Very easy and the "one pot" makes clean up a breeze.

    This soup is delicious and so easy to make! I like to add a little smoked sausage or chopped meatballs but it's great on it's own too. I don't add the red pepper flakes because I don't like things too spicey.

    I cut up 3 chicken breast in bite size pieces and sauteed it with the onions and garlic and then added the rests of the engred. It was delicious

    I made this for a simple weeknight dinner and everyone in the house loved it. I'm vegetarian, so I just used veggie broth instead of beef broth and everyone raved about it. Here are some of the other substitutions I made:

    I used fresh veggies instead of the blend... because it's what I had in the house.

    I used the entire bag of tortellini because we like too.

    I also used a bigger can of beans... because we like them too.

    I omited the red pepper flakes and used some fresh herbs like: oregano, basil, and sea salt and pepper.

    For the meat lovers in the house, I sprinkled a little parm cheese in their bowls.

    I paired it with the focaccia, I made that almost like the recipe except I put parm cheese on the top too.
