Olives didn't taste right but I can't quite put my finger on what was wrong.

Oh so good! I make these as a snack for myself a lot now : They are great for guests too, because the recipe is always a hit.

I had eaten these at a party a few months before I tried these myself. They are superb. A few lemon rinds does not mean a few lemons!!! You just peel a few pieces of rind off a lemon, for crying out loud.

Seems like this is kind of a wasteful recipe. I'd never used fresh oregano stems in any other recipe before and wasn't sure what to do with the leaves once they were removed. I wasn't sure how many "Few" was in regards to the lemon rinds so I used 3 lemons. It was a lot of work to remove all of the juice, pulp and membranes and then to just throw all of that away for the rinds. I didn't see this prepared on television so from the picture it looked as if the rinds were used cut in half which is what I did. I have to say I might make this recipe again but I'll omit the oregano stems and the lemon rinds since all I really tasted were garlicky kalamata olives. I enjoyed them but it was quite a bit of work in order to get there.
