These were so good. I had this in the oven and the kitchen cleaned up in 5 minutes! Super cheap and really yummy. Made with paula's mexican rice, which was great too. We had the black bean burgers yesterday, which I liked a lot, but this I think I liked more.

Okay, I'm 1/2 reviewing this recipe-- I did it differently. It's worth mentioning bc they were YUMMY. I used Tyler Florence's "Black Beans in a Pressure Cooker" (from FN to make black beans & rice & had a lot of leftovers. It is OHMYGOD delicious. I saw the Enchilada recipe & decided to give it a try. I pureed the black beans w/ a hand mixer & used THAT to fill the tortillas. It's got a texture like refried beans but it tastes SO much better! I rolled up the tortillas just like Sandra says, covered them with a packet of salsa that came from a fajita kit, & smothered them in cheese. They were a 20 minute experiment, but I WILL make these again, only next time I'll put a little cheese inside & I WILL try to find enchilada sauce. There just wasn't enough salsa in my packet! YUM! They got 8/10. This review may not be helpful with the original recipe, but I highly recommend trying the enchiladas this way.

I have made the black bean burgers from this recipe many times and absolutely love them. However, I made the enchiladas for the first time the other day and was sorely disappointed. I found the mixture to be too squishy in the enchiladas and just didn't enjoy the texture. I plan to cook the mixture in a skillet for a few minutes before rolling the enchiladas next time to get a better texture from the beans.

This is wonderful! I have made this several times, even for company. So easy. I also don't make the burgers just make lots of the filling and then freeze some in a container or make the dish and freeze. I can't tell you enough how much my family enjoys this. Super easy and super cheap. Aldi's has enchilada sauce now too.

I liked the texture and flavor of the finished dish as Sandra made it. My only complaint is that I like my enchiladas with a little more spice than the burgers had. So I added a a can of diced tomatoes with green chiles and a couple pinches of taco seasoning (from a packet to the bean mixture. I also put a bit of shaved pepper jack on top along with the cheddar she calls for. Delicious idea to use the leftovers!

I made the Black Bean Burgers last night and it wasn't that great. Then I decided to make these!! They are so easy to make and they taste way better than the burgers!
