    My husband and I looooved this recipe! It's easy to make and filling. I've made it twice already. I also tried it using the canned green enchilada sauce, swiss cheese, and with some cilantro in the bean mixture. It was just as good if not better. One of my favorite recipes.

    These were great! I kicked up the filling with a couple of dashes of hot sauce. The black bean burger was pretty good, but I'l probably go straight to the enchiladas next time and freeze the leftovers.

    How simple is this?! These are soooooo good and so simple to make. My fiance and I LOVED them! WILL MAKE AGAIN!

    I made these two nights ago and they were great! The black bean mixture is delish, I used low fat cheese, some guacamole and low fat sour cream to garnish...very tasty and very filling. They freeze well also!

    In my opinion this was better than the black bean burgers! I added some tabasco sauce in the enchilada sauce for some hotness, which I like. I made a nice avocado, tomato, and onion salad with lemon juice, cilantro, and olive oil. It was a nice contrast to the heavy enchiladas. Could easily mix this up to alter!

    This sounds good, but I can't find the recipe "leftover black bean burger mixture". Am I overlooking it somewhere? The burger recipe sounds really good, too. Anyone know where this is?
