    Was very happy to stumble across this recipe and be reminded that, "the basic way to pan fry about anything," (as stated in a previous comment is still great. For those of us who are always wrapped up in the more difficult recipes this was a refreshing change. Fresh parsley and parm are a great combo and made for a great little coating!

    I have never fried zucchini with out breading it first. I did enjoy this and loved the Parmigianino cheese with it. Will be doing this again, Can't wait for the summer and the garden to be in full bloom. Thanks Sandra.. Don't know why some people have to be so hateful

    This is the basic way to pan fry about anything: oil, butter and seasonings, cook 'till done.

    Glad it helped some folks. Give the same method a try for chicken, fish, pork chops, summer squash, carrots, potatoes, mushrooms, etc.

    I REALLY ENJOYED THE DISH! IT TOOK A FEW MINUTES TO MAKE AND IT EVEN IMPRESSED MY HUBBY WHO IS NOT SO FOND OF VEGGIES!

    This was delicious and couldn't be easier or faster. If your pan is already screaming hot, the zucchini will take less than 5 minutes too cook, so either lower the heat or be quick with the toppings before the zucchini turns to mush.

    Yum! This is a good one. I really enjoyed this and could not be easier to make! This is great for those on low carb diets too-the parmasan hardens and it's almost like you are getting a breaded treat, but you're not! Also a good way to get the kiddos to eat some greens.
