    Very tasty easy recipe for zucchini cakes. I made it as written except used a baking mix to save time & work. Don ' t sauté onions. Leave raw and it 's delicious. Yummy is right!

    Wow! This was great. I didn't have garlic so used horseradish and added a little rose radish to the sour cream. Wil make again and again!

    More people really need to try this recipe. Yummy and pretty easy. I only wish she had said what the approximate measurement is for the shredded zucchini - my neighbor gave me a HUUUUGE one from her garden, so I had no idea how much of it to use. I gestimated about 2.5-3 cups b/c that's what it looked like in the video. I sauteed the onion, like others suggested, with a dash of red pepper flakes. Also, I divided the baking mix by 6 which means:
    1 c. flour
    1.5 tsp baking powder
    pinch or two of salt
    2 Tbsp butter

    Or at least, those are the measurements I used, and it turned out great. Cheese would be a great addition, too - any white cheese, I think. Oh, and it made about 15 patties/cakes.

    Made them yesterday...all I can say is, YUMMY!! Rather than making their, baking mix, I used a cup of bisquick and cut in butter. Thinking next time I will add more zucs and maybe even a little cheese to be extra bad...LOL

    The recipe for the Baking mix was confusing when you only need one cup. I used Bisquick instead and cut in butter in small food processor. One zucchini was plenty for 2 people. I sauted the chopped onion before adding to mixture. Then I covered each cake with panko. Why, you say, I just love panko. I used the recipe basics and it was very good. Will make over and over.

    Can someone explain to me why in the WORLD she says to use one cup of the Baking Mix, yet the baking mix calls for SIX CUPS of flour? Why the hell do you have to make so much of this mix if you're only gonna use one cup of it?

    I really appreciate this recipe! It makes a couple of zucchini go a l-o-n-g way for dinner. We really enjoyed it. Be sure to squeeze all the water out of the shredded zucchini as directed. It really helps the final product.

    I was interested in trying out this recipe when I saw her demonstrating it on her show because it reminded me of "Hush Puppies". I must say that this recipe is not only easy to make, but it is also very tasty. This is definitely a good side dish for lunch, dinner or just as a snack and it's good recipe for anyone looking to use up extra zucchini before it goes bad.

    If your garden is overflowing and your neighbors have locked their doors, this recipe is a lifesaver!

    I made the recipe and froze one cake, thawed it and heated it in the oven. It was perfect.

    I do wonder about freezing uncooked batter...

    I tried this receipe as an appetizer for a family get together and everyone
    loved it. It was wonderful. I also did as another reviewer did, I used butter instead of shortening. Even my picky kids came back for more. Will definitely make again
