Beer Batter Onion Rings

Ingredients

  • 1 scant cup all purpose flour plus extra for dusting
  • 1 cup beer
  • 2 Vidalia onions, peeled and cut crosswise 1/3-inch thick and separated into rings
  • Vegetable oil for deep frying

Directions

Put the flour into a bowl and make a well in the center. Pour the beer into the well and whisk until the mixture is just combined. Strain the batter through a sieve into a clean bowl and let it rest, covered, for 1 hour.

Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter. Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden. Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

    This is an extremely easy recipe to follow. I don't think you could mess it up. There really isn't any work to this either.... The onion rings turn out crispy and delicious. My onion rings often go a fast as I can fry them. The whole family is able to make these, even my husband who doesn't cook. My kids are 16 & 17 so they are old enough to be by hot oil.     I think the biggest issue with this recipe is that people aren't checking their oil temp. The oil must be at 370 for each... and EVERY batch. When you remove a batch, put it onto a cookie sheet on paper towels into the oven to keep warm (325?), make sure the oil is back at 370 before putting the next batch in; that can take a good 5 minutes. As for the batter, it is more than enough for one big onion; we've done 2 plus. But, it needs more liquid to flour. I start with a good cup and a quarter of beer; and end up adding almost a whole can. I let it sit with the cup and a quarter for a while and if it's still too thick; I pour in some more beer. Also, I add in some cayenne pepper, a tsp and a tsp of salt. These onion rings come out GREAT and are even great as leftovers. We use onion we can get are hands on which mostly happens to be white as we live in Baja California...maybe it's the Mexican beer that is the secret? No - it's make sure the temp is right on the oil!!! Oh, we make these like once a week!Read more
