Ingredients

  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 15 ounce can black beans, rinsed and drained
  • 1 mango, peeled and chopped
  • 1 ripe avocado, peeled and chopped
  • 1/2 red onion diced
  • Tabasco, to taste
  • 2 tablespoons minced fresh parsley
  • 1 cup shredded Romaine lettuce

Directions

In a bowl, whisk together lime juice, oil, and salt to taste. Stir in remaining ingredients, except lettuce, and season with salt and pepper to taste. Let salad stand, stirring once or twice, 15 minutes for flavors to develop. Serve salad on top of lettuce.

    I made this salad for the first time today, and was very happy with the results. I skipped the lettuce and tobasco, but... otherwise, prepared the salad according to the recipe. The flavor combination of the mango, red onion, and avocado with the black beans and lime juice...heavenly! And be sure to use fresh parsley, which also adds great flavor.     I served this salad without the onion or the hot sauce so my 87 year old mother wouldn't have digestive problems. It met... with rave reviews. I look forward to adding the red onion and the tabasco, but the leftovers are delicious, as they stand. The salad was served with red and green baby romain.
