Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup shredded cabbage
  • 3/4 pound roasted onions, peeled and chopped, reserving liquid
  • 3 1/2 cups beef broth
  • 1 cup pot roast gravy (leftover)
  • 1 pound roasted beets, peeled and julienned, reserving liquid
  • 2 cups diced pot roast
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh dill
  • Garnish: sour cream and dill sprigs

Directions

In a large heavy sauce pan over moderate heat, melt butter, add cabbage and cook until wilted. Stir in onions and reserved liquid, the broth, the gravy, the beets and reserved liquid, the pot roast, the vinegar, and salt and pepper to taste. Simmer the soup, stirring occasionally, for 10 minutes. Stir in the chopped dill. Ladle into warm bowls, spoon a dollop of sour cream onto each serving and garnish the soup with the dill sprigs.

    My family emigrated from Russia in the early 1900s to escape oppression from the upsurgent Socialist factors. When they... settled in rural Michigan and started a farm, my great-grandparents adapted their tried-and-true recipes to incorporate what they had on the farm, in order to feed their 7 living children. What resulted was a soup that I affectionately embrace as being as much a part of me as the faberge egg and the Kremlin. My family's recipe incorporates beef soup bones, cabbage, potatoes, beets (of course, as it's a beet soup), tomatoes, vinegar, and lots of dill. Nothing more than that and a lot of love. Most recipes I've found add lots of things like apples and parsnips and other things, but I don't think all that is needed. Stick to the bare-bones basis of this soup and there is nothing better or more comforting. Borscht is home to me.Read more
