This is great comfort food! Be careful not to burn the broccoli. Although it says to cover and cook for 3 min., depending on the temp of your pot it can burn quickly. I highly recommend it.

I made this for a late lunch, and determined that it is a reasonably tasty lunch recipe, but not something I would serve for dinner. Leftovers the next day were actually better. The broccoli, done as such, added a nice, different flavor as opposed to lightly steaming. Also, I used vegetable broth. Always nice to find a recipe that translates easily into vegetarian!

This is great. Enough for dinner and lunch tommorrow. Broccoli has a ton of potassium in it too! (sorry about spelling
