i made these eggrolls for part of a meal one night, and although everyone in my family liked them and the dipping sauce, i did not want to try them. after i made them crispy and crunchy, i kept them in the oven to keep them warm while i prepared the rest of the meal. when i served them however, they turned kind of soggy/squishy...so either prepare them just before you eat, or dont put them in the oven.

I am never "buying" eggrolls again. Why? when you can make them yourself and you can actually see a piece of "shrimp" rather than the pseudoshrimps you find in the storebought/fastfood place.
I am making this again!!!

This was my first attempt at making egg rolls. I wanted to serve them at a party, but didn't want to buy them at the grocery store b/c most times they are just yucky. So, I made them myself. Everyone LOVED them, and wanted the recepie! Emeril, you rock!

Yes, they did flip, but that was after a few modifications I recommend. Firstly, be generous with the salt and pepper in filling. It needs it. When filling the wrappers, be sure to squeeze out any juice or the wrapper may get soggy. Have one person wrap as another fries in about 1/2 inch of oil. Another tip-add more honey and some type of thick stir fry sauce to the dipping sauce. The original is bland to my taste. I will make these again for sure, maybe even today.

These egg rolls were great. Everyone loved them with the sauce that was included in the recipe and with other sauces that I put out. They took a little bit of time to make because of the chopping and rolling but were basically easy to make. If your making egg rolls these are the ones to try.
