Ingredients

For the fine herbes butter:

  • 2 tablespoons softened butter
  • 1 tablespoon fines herbes (equal parts chopped parsley, chives, chervil, and tarragon)
  • 1 tablespoon oil
  • Salt and freshly ground pepper
  • 2 (8-ounce) filet mignon
  • 2 tablespoons chopped shallots
  • 1/4 cup red wine
  • 1/2 cup beef stock
  • 2 tablespoons fines herbes butter

Directions

With a fork, combine the butter and herbs. Form into a ball, wrap in waxed paper, and chill.

Heat a stainless steel skillet until very hot but not smoking. Add oil. Sprinkle salt and pepper on both sides of the steaks. Place in the skillet and cook for 3 minutes per side for medium rare. Transfer filets to a cutting board. To the pan add shallots. Let cook for 1 minute, stirring. Add the red wine and let reduce until almost all the liquid has evaporated. Add the beef stock and let reduce by half. Stir in the fines herbes butter. Serve the filet mignon with the sauce.

    I just made this tonight for our 5 year anniversary (hard to go out with an infant). I can't believe how easy it was!!! I... paired it with a 7 year old cab that we got for our wedding. I served it with fresh wilted garlic/pepper spinich and roasted herb potatos. It looked and tasted like restaurant food (at a fraction of the cost). I'm going to make this again for another special occation. 3 min/side for medium rate is right on! Use a timer!Read more

    Truly flawed recipe - never again.

    This recipe left my filet blod raw and I used the filet size indicated in the recipe and followed accordingly. Any recipe... that you follow and results in a kitchen fire (in another cook's review) is TRULY FLAWED and poorly written. A waste of filets - I had to place them in the oven to cook more just like another reviewer. A better, less intense and easier way to cook for filets I found on allrecipes.com called Filet Mignon with Rich Balsamic Glaze by Linda W. You can follow that recipe's cooking technique (browning & braised) but still use herbed butter from Sara's recipe. I like Sara's recipes but someone at Foodtv must have been drunk when writing the instructions for this recipe. Your home will burn if you heat oil until it smokes!Read more
