Ingredients

  • 6 medium-size potatoes, boiled in their skins
  • 2 eggs, lightly beaten
  • 2/3 cup sifted flour
  • 2 teaspoons salt
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon nutmeg (optional)

Directions

When cool enough to handle, peel and mash or rice the potatoes. Beat in all the remaining ingredients. Shape into 1 or 2-inch balls. Drop into just boiling, salted water and cook for 7 to 10 minutes. Drain. Serve with sauerbraten.

    sticky dough? - try baking potatoes

    I bake my potatoes instead of boiling them, this cuts down on the moisture, I also rice the potatoes while they are hot, then... let them cool down before mixing in other ingredients. 2/3 cup of flour is usually enough. Not using the extra flour keeps the dumplings very light and fluffy. Sometimes i also form the dumplings around a crouton, this prevents the "doughie" middle. Hope my tips help.Read more

    This is similar to my family's recipe. The "key" to keeping them from falling apart is to let the riced potato's DRY. My... Great Grandmother would lay the riced potato's out on trays and let them dry overnight before making the dough. This obviously makes this dish a LONG process. Nobody in my family would dare to make this dish unless they had the TIME required to do it Nana's way.. I also like to jazz it up a bit(sorry Nana) I add some chopped sauteed onion, a little garlic and some parsley... Also after boiling them you can let them cool completely, slice them, and fry them golden brown... give it a try. They really do go best with Sauerbraten and Ginger Snap Gravy.Read more

    Good basic recipe; however, I needed about 4 cups of flour. My potatoes were probably a little larger than the "medium" this... author used, but still, the percentage of flour/potato was way off. As is, I could not form balls from the mixture until a much larger quantity of flour was added.Read more

    When I finished mixing the ingredients, the dough seemed rather soft. Even though I thought I would make them into balls,... there was no way that could do that. I dropped them into boiling water, and they completely disintegrated. When I added more flour (A LOT more flour), they stayed together a little better, but even after cooking for 20 minutes, they were doughy. I was disappointed--had made the Sauerbraten and the dumplings would have been terrific with it.Read more
