This recipe is a lot of work - but completely worth it!

True, the ingredients don't add up to the flavor punch I expected?although my husband went bananas over it.

Try shopping at indian markets to find inexpensive saffron and other ingredients. I used vanilla extract at the end of cooking rather than buying a whole vanilla bean.

I thought with all the work and the spices it would pack a punch, but it was bland. It is not worth the effort.

While the textures of cucumbers, pineapple, and tomato make this dish an interesting experiment for your cullinary skills and pallet, it certainly didn't seem worth the price of the different ingredients--the saffron and vanilla bean in particular. I also felt that a roux should have been made with the initial vegetables cooked for the sauce instead of thickening the sauce later.

While I did not dislike this recipe, I feel better dishes can be made from VERY cheap curry mixes available in the ethnic food section of your grocery store.
