Ingredients

  • 2 to 2 1/4 cups unbleached all-purpose flour
  • 1/4-ounce package fast acting yeast
  • 1/2 teaspoon sugar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Directions

In a large bowl whisk together 3/4 cup of flour, yeast, sugar, and 2/3 cup hot water (130 dgrees F). Stir in the oil, 1 1/4 cups of the remaining flour, and the salt and blend the mixture until it forms a dough. Knead the dough on a floured surface, incorporating as much of the remaining 1/4 cup flour as necessary to prevent the dough from sticking, for 5 to 10 minutes, or until it is smooth and elastic.

Alternatively, the dough may be made in a food processor. In a food processor combine 3/4 cup of the flour, yeast, and sugar. With the motor running, add 2/3 cup hot water (130 degrees F), and turn the motor off. Add the oil, 1 1/4 cups of the remaining flour, and the salt and process the mixture until it forms a ball, adding more water, 1 teaspoon at a time, if it is too dry, or more flour, 1 tablespoon at time, if it is too wet. Knead the dough by processing it for 15 seconds.

The dough, prepared by either method, may be used immediately, but for better flavor it is best to let it rise once. Put the dough in an oiled bowl and turn it to coat it with the oil. Let the dough rise, covered with plastic wrap, in a warm place for 30 minutes, or until it is double in bulk, and punch it down. This dough may be used instead of the basic pizza dough.

    This is the easiest pizza dough ever! I used a food processor and added Italian Seasonings, Garlic powder and Onion powder... with the yeast and sugar.I let it rise for 15 minutes. It patted out into the pan easily (no rolling pin needed). I baked it at 400 degrees F for 10-15 minutes. Both my sons made the same comment someone else made - this is better than pizza hut. I will definitely make this again! Fast enough to make on a weeknight.Read more

    At Last, a great texture!

    Been trying every recipe I could find on the net without much satisfaction. This one has great flavor and texture. I never... would've found it but I hit a late night with nothing thawed except peperoni and cheese so I googled "quick pizza dough recipes" instead of my usual "thick crust pizza dough," etc. I made the recipe even faster. I double the batch and ASAP after kneading I roll it out to about 1/4" thk and lay it directly on two greased & floured baking sheets, trim the excess and fold over the edges to make a rolled crust. Drum a pattern of fork holes so they don't lift off the pan than liberally slather with Ex Virgin Olive Oil. Then I set them both under the downdraft of my oven as I pre-heat the oven to 450 deg F. The warmth really speeds the rising. I spin them both 180 deg to get the rising on both ends, 10-12 minutes per end. By rising directly in the pan, I can top right away and throw the warm pizzas directly in without hesitation; the actions of saucing and topping the pizza effectivly punches down the dough to distribute the bubbles. Bakes in 10-14 minutes (check often). So from flour in the bag to sitting at the table I usually get two cookie-pan sized pizzas in under 45 minutes!     Quick, easy, soft crust, good flavor

    Let it rise once for about 30 min, made 3 small pizzas. Baked 10-15 min at 425. Used honey instead of sugar in the dough,... about 2 Tbs, mixed it in with the hot water to ensure even mixture. Will use this recipe again! Each pizza was made with different toppings, they all turned out great. Read more

    Quick, Easy, and Very Good Pizza Crust

    I've been looking for an easy-to-make pizza crust recipe for a long time, and with this recipe I've finally found it! Very... easy, very quick, and delicious. I accidently found a nice little modification to this recipe which was a nice variation. I ran out of white flour and had to use some whole wheat flour I had on hand to finish the recipe--it turned out great! I ended up using 1/2 cup whole wheat flour and 1-1/2 cups whilte flour, which turned out to be a very nice mix. Thanks so muc for this recipe! I'm sure I will use it over and over again!Read more
