Ingredients
- 6 potatoes, skin removed, cubed
- Salt and pepper, to taste
- 1/4 cup chopped flat-leaf parsley
- 1/2 cup Pecorino Romano
- 1/4 cup bread crumbs
- Olive oil
Directions
Season the potatoes with salt and pepper. Cover potatoes with the parsley, cheese, and bread crumbs. Drizzle the olive oil over the potatoes. Bake in a 350 degree oven until brown and tender.

A simple side dish, would have benefitted with a bit more personality. Also would have inspired more confidence in the home cook if the directions were more specific (e.g. approximate cooking times, potato type. Additions, such as rosemary (instead of parsley, or spicy bread crumbs improve this dish.

These potatoes are really easy to make, and they taste fantastic. I made them several times for a potluck and for my 20 family members on vacation. They were a hit every time, and still make good leftovers.
