this was a nice and easy meal to make. It did make two dishes and was that ever nice for the next weekend. Great sauce and the meat was so tender and with great flavor. Will do again.

I made these enchiladas for my college girlfriends on a recent weekend visit. You know it's good when everyone asks for the recipe! I did most of the prep work ahead of time and rolling the actual enchiladas was fun to do together. This recipe makes a lot, so it's best for pot luck or buffet style parties. Oh, and regular enchilada sauce works fine if tamatillo is not available at your local store.

I have been using a recipe for chicken enchiladas that I found for years. My family loves it. I saw sara do "Zach's alotta southwestern enchiladas" on her pot luck episode and decided to try it. It was outstanding! I mean, chicken in one hand and tri tip steak slow cooked for 12 hours in the other, well, no contest. Of course I modified the recipe by putting all the filler ingredients in a bowl so you can build the enchiladas faster. Again "Outstanding", Thanks Zach and Sara. Also do you have a direct e-mail address for the "Food network"?

These are delicious. I'd give them a 4 star review, but they are very time consuming, so I'm only giving it 3 stars. The tequila beef is outstanding.

Very yummy! But be warned, it is spicy. For children, I suggest making a separate batch without the heat.

I tried to prepare tri tip set my cooker on low for 10 hrs. Came home to charred chunks of tri tip. What went wrong?
