VERY moist and delish !! I also used 2 TBL Apple Pie Spice instead of the "plain" cinnamon...I used the smaller aluminum loaf pans, and made 3 loaves...baked 55 minutes, not QUITE done, left in another 10 minutes...VERY good

I just finished baking this bread and had a slice it is delicious! I made mini loafs because I am giving them away but it worked just as well, same cooking time a little over 50 min. I also used pumpkin spice instead of cinnamon next time I will use both! And I substituted craisins for raisins because of personal preference. I am at high altitude : just fyi

This recipie was delicious! The bread is dense and very moist. I read previous reviews before I made it myself and took into consideration that a few others had said the bread came out a little bland so instead of 1 tbs. of cinnamon I used 2 tbs. of pumpkin pie spice and it was perfect, everyone loves it! I will definitely make this one again.

Pros: Very dense. 2 huge pretty loaves. Earthy tasting. Very easy to make. I liked the idea of apple cider as an ingredient.
Cons: Took 70 minutes to bake (not 50 minutes, I'm at sea level. Cinnamon isn't enough spice, really needs Pumpkin Pie Spice. Would taste better with dried cranberries.
I used pecans instead of walnuts. Yum.
I've made a lot of Pumpkin Bread, this one is fabulous, I will make it again... soon because it's going fast.

I made this tonight for myself and my boyfriend. We both enjoyed it. I didnt have the cider on hand so I used applesauce and it came out great. I also added like the other comments, nutmeg, cloves, allspice and salt. I baked them in a glass pan and a dark loaf pan so I reduced the heat to 325 degress. Same amount of time as the recipe called for and they came out perfect. We plan on having this for breakfast in the morning maybe with some honey butter.

I made this for Thanksgiving, and all 3 loaves I made were gone in no time! I wanted to make it a little more of a dessert, so I added 1 cup of white chocolate chips, and it was great! Its very moist and dense, it took a little longer to cook then the instructions had said, but other then that, it was perfect!

This recipe is really bland! I liked the idea of cider to add flavor and replace some of the sugar needed to make it sweet, but I was disappointed with the final loaves. Bland and heavy. It wasn't as good as other recipes on this site. Try Cathy Lowe's recipe; it was much better, but the cook time is more like an hour or so.

but it reminded me of a angel food cake. it was very spongybut it tasted great. it is a high carb bread so if you have sugar diabetes becareful and eat small amounts. i added nutmeg and didnt have cider but had some dried cider packs so i added it. and as my usal i added extra spice
