There are several problems with this recipe. First, the volume of batter easily filled 3 loaf pans, not 2. Second, the baking time is listed as 50 minutes but after 50 minutes the centers were still liquid. It took over an hour and a half to bake the 3 loaves and I know my oven works fine because I never have problems baking other dishes. Finally, it is way too sweet and dense, very much like a brick of sugar. I realize this may be a taste preference issue, but there's no getting around the first two problems.

the recipe makes a great tasting bread, but the timing is way off. It says it makes two loaves when it can actually make 3-4. It took almost 2 hours of baking time, probably because of having to check it all the time.

I made this a little healthier and it still came out delicious. Like others suggested, I used half the amount of sugar, and half of the cranberries. I used half whole wheat flour, and apple butter for the half of the oil. I thought it was perfect--not too sweet but sweet enough to balance the tart cranberries. I will make this again.

I have not ventured into the world of cooking and baking that much. I probably would be considered an idiot in the kitchen! I saw this easy recipe online. I decided it sounded like an interesting thing to make and take to Thanksgiving Dinner with my grandparents to say I did something. Everyone in my family who has tried it so far loves it. One loaf to eat now, the other to freeze for Thursday. I baked it for about 1 hour and 20 minutes. I used 2 cupas of sugar, next time I'll try 3,4 sounded like too much. I used 3 cups of cranberries. It was so delicious. People have heard cranberry and pumpkin and have not heard of the combo, but my family loved it. Make this now!

I found that there in too much oil in the bread, and the pumpkin flavor is not as pronounced as I would like it and it lacks an interesting taste. It was easy, though.

I also added about 2 C of chopped walnuts and this recipe made 8 mini-laves to give to friends. Everyone LOVED it and asked when I was going to make it again. The sweet & tart cranberries make this a special pumpkin bread--try it!
