    The first time I made this recipe I followed the recipe to a T. My family loved them but I felt there was too much filling for the number of tortillas called for. I'm getting ready to make them again but this time I'll use more tortillas and make a smaller pan to freeze for later. My son-in-law likes things really spicy so he added hot sauce to his taste. The rest of us just scaped our plates clean.

    I thought this recipe was pretty good, but too mushy and soft. I liked the taste of the corn and spinach in the enchiladas. I think I may have put too much filling in, because every time I cut a bit it made a big mess. I'm not sure if I would make this again.

    I can't believe how disappointed I was in this recipe...usually I love Sara's recipes. It was a mushy mess, and tasted nothing like either corn or spinach, and there was so much sour cream I could hardly find the chicken. I live in Houston, so perhaps I am hard to please when it comes to Mexican food, but I thought this was awful. The green sauce was the only redeeming feature.

    My husband and I both loved this recipe. It wasn't too high in calories and tasted great. As a vegetarian, I substituted a 14 oz. can of black beans for the chicken, and it was delicious.

    We loved this. My husband, who claims to hate corn (is that possible? had no complaints about the corn in the filling. Once the chicken is shredded, this is a quick and easy dinner.
