    These enchiladas were just terrific. Since I used smaller tortillas, I had leftover filling. Two nights later,with a little of the extra shredded cheese on top, it made a great hot dip with tortilla chips for some unexpected guests. Two crowd-pleasers from one recipe preparation!

    So darn good and enchiladas are a family favorite. Having a different flavor through ingredients made it a refreshing change.

    These are SO easy to make, and they taste GREAT! My husband chowed down, and when he was full, he kept filling up his plate anyway! Since I was able to find some low-fat/calorie creamed spinach in the freezer section of the grocery store, they actually ended up being pretty healthy. (As long as you're using the light sour cream as well. I just ate the filling by itself to avoid the carbs of the tortillas. It was so good, I didn't miss the actual 'enchilada' part at all! This is a MUST TRY!!!

    I made several receipes from that show and they were all good. My husband and son said "THIS IS A KEEPER" They want it at least once a week !!!
