This is the best pot pie recipe ever! I absolutely love the roasted root vegetables. You can even substitute the biscuits with a pie crust if you need too because the filling is so delicious and flavorful. My favorite by far!

I have tried every biscuit recipe there is, this is the best. My biscuits have come out flat and hard no matter what I've done. These came out fluffy and flaky and they were supper easy! No worrying about touching the dough too much or any of the other "rules" for making biscuits. I highly recommend.
