I made this for an elegant dinner party and everyone raved! Easy to prepare and tasted great, AND it's healthy.

This recipe requires a fair amount of prep work but the results are worth it. Even my finicky 11 yr old loved this dish. I couldn't find arugula but didn't really miss it as there are so many other good flavors to enjoy. Next time, I'll serve it with some nice crusty bread to mop-up the tomato salad juice. In my opinion, no other starchy side dish is needed. AND, the left-over tomato salad and gremolata tossed with a can of drained chick peas made a tasty dish for lunch the next day.

I tried this last night and it is the perfect summer fish dish. The combination of tomatoes/olive oil/garlic/basil/lemon is brilliant. I prepared it using a slight variation; instead of grilling the Halibut I sauteed it in 3 Tbsp. olive oil and was delighted at how well it turned out (although it does have a slight tendency to fall apart - next time I may use a non-stick pan to keep that from happening. To complete the meal, I had a lightly oaked 2001 California Chardonnay (Talley and it was perfect.
