I made this chicken over the long weekend and it was GREAT! A lot of prep time and work but the end result was well worth it!

Maybe I should see the show but this was diffficult to make and very messy. I made everything I could the day before but I used every large pot in the house. I was following the recipe exactely; 4 chickens cut in half. 8 half chickens need very big nonreactive pans. I have vinegar marinade all over the kitchen. I used everything that was called for in the marinade but cut the salt in half. The marinade spilled in the oven but I steamed the chicken in apple juice for an hour and a half and then put it on the grill for a half hour and basted the chicken every 10 mins. I thought it was good but not great - everyone else loved it. Too much work for not enough flavor. How can you make this on the grill when you need to steam the chicken with apple juice? Would someone enlighten me!

I printed this recipe quite a while ago,and finally tried it this weekend. It was AWESOME. I grilled the chicken outside on the Weber charcoal grill, and used some Mesquite wood chips. The flavor was fantastic. The combo of marinade, rub and mopping sauce along with the charcoal made for the best chicken I ever made.

This rub has become my standard. I have tried others, but always come back to this one. I use it on ribs, chicken, brisket and pork.
