    I tried cooking jollof rice with the method suggested in this recipe for New Year's lunch. I usually make it a different way. It was an interestingly delicious outcome. I'll definitely try it again. I don't like to cook with bouillon cubes so I used freshly made chicken stock and added some sea salt to season.

    I`m a Nigerian and i have made this meal several times only in a different way. There is an important ingredient that is missing here which is salt.

    I read this over again, 8 bouillon cubes to 1 lb of rice? That is too much. There is no salt in the recipe either. You can substitute dry thyme for fresh also.

    My husband was born and raise in Ghana and this is a very common food his mother always makes. This was a good recipe, close to my mother in laws. We made it much spicier by adding hot peppers in the first step & cayenne. I also only did 6 cubes bullion (too salty And in place of 2 cups of water I added sodium free chicken stock.

    Made this for a luncheon party and everyone loved it. One attendant was actually Nigerian and she loved it as well.
