    Far too much red onion in proportion to the cucumber. If I try to finish this off, my spouse won't get near my breath for a month. In retrospect, I should have made a half recipe. I guess I'll use small portions of it on salads for the next week. It should be OK as an accent, but is far too strong by itself.

    It was pretty good, but the red onion was very strong despite marinating several hours & I couldn't taste the ginger. I'll make some tweaks next time.

    Nice change from the usual cucumbers in vinegar and water. Just a hint of ginger made them refreshing. The longer they sit, the cukes tend to wilt a bit. I used regular garden cucumbers sliced thin. I may cut them closer to 1/2 inch next time. Good recipe.

    After trying many different non-creamy cucumber salad recipes, I found this. I substituted white onion for the red and cucumbers from our garden for English and it turned out fabulously! My 3 children (4-year old twins and a 2-year old and even my husband who is not a fan of cucumber salad loved it! Thanks so much for the fabulous recipe!

    When you have all the great kitchen gadgets this recipe is super easy. I used my mandoline for the cucumber and onions and my microplane for the ginger and of course the great garlic press!!! Also the mandoline makes everything the same size which impresses your guests!!!!

    I used middle eastern cucumbers, which are more crispy. I didn't have chives around, so I used green onions. I also substituted shallots for the red onion. Still, the recipe turned out fabulously!

    This was a nice recipe, love the ginger. After a day in the refridgerator the red onions turned the cucumbers red. Next time, I will reduce the red onions a bit.
