I put the squash in the oven until the skin was soft to the touch. It was much longer than the 20 min recommended. My husband raved about it. It was the best way to prepare this kind of sqash.

Just tried this dish and I must say the 20 minutes in the oven is definately incorrect. The squash was almost like I hadn't baked it at all. I transferred it to the microwave and gave it another 3 minutes on HI.

As I scraped the squash, I felt it was right, but once I tried it, I knew it needed even more time...it was crunchy.

The dish would have been much better if the squash had been soft.

I certainly "got it". The sweetness of the bell pepper mixed with the capers and lemon/butter was awesome. Had the timing of the squash been correct, this would have been a perfect dish.

The only thing wrong here was the texture of the squash.

I also microwaved the squash. The label on the squash called for 6 minutes per pound on high and it came out perfect. I didn't have any red peppers so I used pimientos and didn't have any fresh parsley but I did have fresh thyme and used that instead. I also didn't have any zucchini so left that out. The recipe was an inspiration to use what I had on hand and it came out fabulous! I especially loved the capers and lemon combination in this dish.

    I love spag sq.
I simply cut it in half, removing seeds, and cover the cut side with plastic wrap. Microwave it for anywhere from 5 to 8 minutes.

Very tasty. I didn't use capers and it was still very good.

I have never cooked with spaghetti squash, but was given some plants. This recipe is really good. I zested a lemon and added that along with the juice.
