I'm so surprised some of the people rated this dry. Mine came out so moist and creamy. You definitely need the wine. However, when I first made it as directed with the cream before the wine, it curdled when I added the wine. I needed the dish for a party and my pasta was still ready so I redid it, putting the wine in the roux before the cream and it came out perfectly. I agree it's not the "cheesiest" tasting, but for a different kind of adult-ish mac/cheese it was awesome.

This recipe is the creamiest mac and cheese that I have had in ages. Such full flavor. And it still retains the old fashioned taste and texture of the classic. A true winner.

I found this recipe to have average flavor but was very dry. Some what expensive to make with the exotic cheeses used. After seeing the show with this recipe I expected it to be much better.

Ok, my husband liked it, but I and my son did not at all. It was not very cheesy and not very creamy. It was on the dry side, and tasted more like pasta with flour and cheese. I did not have white wine so I substituted chicken stock for the 1/2 cup it called for. Otherwise, followed to a "T". The bechamel was way to thick and chunked up when placed in the oven. I really prefer a creamy, cheesy macaroni. Not so bad it was inedible, but not good either. I definately will keep on looking for another recipe.

I haven't made it, but it looks great. In response to a suggestion on how to not make it so dry ... I've had that problem with other mac and cheese recipes. Normally I just cut back on the pasta. If it looks like it needs more, then I add it.

The taste was very good, but very dry. I watched the show that this recipe was on & they said this could be made in advance. Too late I realized that the pasta had soaked up all the liquid. Anyone have advise as to avoid this?
