Ingredients
- 3 cups sifted all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/4 teaspoon ground cinnamon
- 3 eggs
- 2 cups milk
- 3 tablespoons melted butter
Directions
Sift flour 3 times together with the baking powder, salt, sugar, and cinnamon.
Beat the eggs, add the milk, and pour slowly into the dry ingredients. Beat thoroughly and add butter. Drop by spoonfuls onto a lightly greased hot griddle. When puffed full of bubbles and cooked on edges, turn and cook on the other side.

yup...basically a cinnamon pancake. they weren't bad, but i wouldn't make them again. my regular pancake recipe is just way better that if i wanted cinnamon pancakes i would just adjust mine.

Basically it's just pancakes with cinnamon, but really, that cinnamon adds some great flavor. Try this with a pure maple syrup instead of sugar and water based ones. The leftovers are great frozen and then toasted with some butter and a little cinnamon and sugar like toast.
