Soo simple!! Soo yummy!! What girl doesn't like vanilla? I have made this repeatedly and have cut my peaches in slices instead of halves and served it on vanilla or caramel ice cream.
A great recipe to have in your repertoire.

The recipe takes alot more time than stated and the difficulty of the recipe is closer to intermediate/advanced than easy. The mint yogurt sells the recipe!!!

I thought that this receipe was very easy yet very tasty and refreshing especially with the warm weather. I did not peel the peaches (the reciepe did not state whether to do this or not and it turned out great. Next time I will probably shock the peaches (boiling water to an ice bath and then peel them. the peaches took longer to poach than I thought but they turned out wonderful.
