Ingredients
- 2 frozen meatless hamburger-style patties with about 100 calories each
- 1 eggplant, about the width of the patties
- 1/2 cup canned crushed tomatoes
- 1/4 teaspoon Italian seasoning
- Chopped fresh basil, for garnish
Directions
Bring a large skillet sprayed with nonstick spray to medium heat on the stove.
Remove the ends of the eggplant. Cut three 3/4-inch-wide eggplant slices. Pat dry, if needed. Save the rest for another use.
Place the eggplant slices and patties in the skillet and cook for 3 to 5 minutes; flip, and cook for an additional 3 to 5 minutes, until fully cooked.
Meanwhile, to make the sauce, combine tomatoes with Italian seasoning in a microwave-safe bowl. Cover and microwave for about 30 seconds, until hot. Mix well. If you like, add additional Italian seasoning, to taste.
Plate one eggplant slice and top with a spoonful of sauce; evenly top with a burger patty. Alternate layering the remaining eggplant slices and burger patty, adding a spoonful of sauce in between each layer. Cover your "tower" with all of the remaining sauce. Garnish with basil.
Grab a fork and knife and dig in!

This was really good. My aunt that is EXTREMELY picky even liked it. We used the Morningstar Farms original grillers and instead of going to the store just used what we already had. We only had fresh whole tomatoes, so I put them in the food processor for a few pulses to get a good consistency and we didn't have fresh basil so we used dried and just mixed it right in the tomatoes. On the very top layer we added just a pinch of shredded cheese to melt in the center. Definitely will make again. So filling no side needed.

It was pretty good. This was very filling, super healthy and only 5 points plus....Yippee! Next time I'll use a bit more seasoning. Oh! I used the flame grilled Boca Burger.

This was fantastic. I used Morningstar burgers....fiancé threw a fit that we were having this due to the "healthiness" of the recipe. Turns out he loved it! I will be making this again and again. Great serving size too...I was so full after!
