Ingredients
- 4 tablespoons vinaigrette dressing, your choice
- 1 tablespoon orange juice
- 1 (15-ounce) can sliced beets
- 2 stalks celery, plus leaves for garnish
Directions
In a medium mixing bowl, combine dressing and orange juice. Strain beets and add to bowl. Slice celery, including leaves, thin on the bias. Add celery to the bowl and toss together. Place on a platter and top with celery leaves.

Just saw this on TV and went out to make it. It contains ingredients allowed on the detox diet from Metagenics. I used Kraft Light Done Right Raspberry Vinagrette and V8 Splash Tropical Blend.

I saw this on TV yesterday and just knew I had to make it. I used my homemade vinaigrette and just the beets and celery. We had it for dinner with tomatoes.
We LOVED it! It is fresh and yummy. When I told my fiance it was almost no calories other than the olive oil, he was disappointed that it was so healthy.

Thank you so much for this very simple recipe to make pickled beets using canned beets. I took another recipe for fresh beets, but my purpose for now is using canned beets. Again, thank you, Sanda Lee, for your very easy recipe. It tasted so wonderful.
