I thought it was a good quiche. Thanks Sandra.

I followed some of the alterations in the review and it worked out great.
Deep dish pie; use only 1/2 cup of milk, use only a teaspoon of rosemary, microwave the potatoes for 5 min.I also used cheddar cheese and half a small onion since I had that on hand. 40 min was not enough time for the quiche to set. It actually took mine about 1 hour.
I will definitely make this again. It was easy to make and not as heavy as other quiches that require heavy cream.

Made this several times. My husband likes it with potatoes in it. A little more substantial than just egg and cheese quiche. I, too, left out the rosemary because it just didn't seem to "fit" in the recipe. Great for any meal. Love it!!

I cut my potatoes into small cubes, didn't use the rosemary cause it seems to be to strong and i used swiss cheese and 4 eggs. It was great!!!

I'm not sure about other people, but I had enough filling (potato & ham to make 2 quiches. I even bought a deep dish crust & it still wouldn't fit. I ended up making the two and adding 2 eggs and some more milk to up the egg base. I switched out the rosemary for chives and it was pretty tasty. It also took longer than 35 minutes to bake. I'm not sure if this was the case for others.

I made this for the first time this morning. It was very good, however, I would change a couple of things. I used evaporated milk instead of regular milk, I also shredded my own cheese ( I like it better than the packaged kind. Also, I think it would be better to use 4 eggs instead of 3. The rosemary is very powerful, I will cut it down to about 1/4 to 1/2 tablespoon next time. I would also suggest cutting the potatoes into very small pieces, maybe even use hashbrown style shredded potatoes. But it was still good, and I'll certainly make it again. Sausage or bacon would be good to replace ham, as well.

A.Maze'N!....I being my normal self, mixed and changed this somewhat myself. Instead of regular milk i used PET milk, i mixed in salt and pepper into the cream mixture also the rosemary instead of on the potatoes and i used hand diced cheese as well as a ham that i baked my self!......With a nice mimosa this was a wonderful holiday brunch!

Awesome recipe! Her microwaved potatoes trick was worthwhile all by itself - just dice, sprinkle with rosemary (I added a little salt, microwave, and delicious side dish! But the quiche came out wonderfully. I didn't have ham on hand, so used asparagus (also microwaved, with a little lemon and garlic and bacon. My daughter loved it too, despite her original reaction being, "yuck, quiche..." She changed her mind!
