Ingredients
  • 10 ounces arugula leaves
  • 2 oranges, segmented
  • 1 small bulb fennel, thinly sliced
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • Kosher salt and freshly ground black pepper
Directions
  • In a large bowl, combine the arugula, oranges and fennel. Add the olive oil and lemon juice and toss to combine. Season with salt and pepper.

  • Serve immediately.
