Ingredients
  • 2 pounds medium shrimp, cooked and cleaned
  • 1 large cucumber, peeled, seeded and diced
  • 5 scallions, trimmed and sliced thinly
  • 2 mangoes, peeled, pitted and chopped
  • 1 jalapeno, stemmed and minced
  • 1/3 cup minced cilantro leaves
  • Salt, to taste
Directions
  • Combine all the ingredients together in a bowl. Season to taste with salt and toss together.
