Simple Homemade Pancakes

Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Dash of salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons melted butter
Directions

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt. Using a whisk or large fork, mix in the buttermilk and egg until well combined and smooth. Stir in the melted butter.

Heat non-stick skillet or griddle over medium heat. Using a 1/4 cup measure, pour pancake batter onto hot griddle. When pancake is golden brown, flip to cook other side. Keep warm in oven heated to 275 degrees.

Variations: Blueberry and banana pancakes: Stir in 1 cup fresh berries into batter.

Probably the best pancakes I ever made. I used a mix of 2/3 yogurt and 1/3 water instead of buttermilk, and added a mashed banana. They are thick but not heavy, a lot fluffier than I thought, moist and tasty. VERY good & easy to make! I make my own buttermilk by adding a little vinegar to milk. I add vanilla to the mix, then blueberries, banana, &/or pecans while cooking for a little heartiness. No more boxed mix in my house!! item not reviewed by moderator and published

Read some of the reviews so I too added a little more sugar. I didn't have buttermilk and my husband absolutly HATES vinegar of any sort so I used some vanilla almond milk. WONDERFUL. I have always used a mix that is on the sweeter side and very tender and these came up to those standards. Lots of flavor, I didn't even need syrup. I made a double batch because it didn't look like much but I have 4 7" pancakes to freeeze after having 4 for breakfast.
