Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Dash of salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons melted butter
Directions

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt. Using a whisk or large fork, mix in the buttermilk and egg until well combined and smooth. Stir in the melted butter.

Heat non-stick skillet or griddle over medium heat. Using a 1/4 cup measure, pour pancake batter onto hot griddle. When pancake is golden brown, flip to cook other side. Keep warm in oven heated to 275 degrees.

Variations: Blueberry and banana pancakes: Stir in 1 cup fresh berries into batter.

Probably the best pancakes I ever made. I used a mix of 2/3 yogurt and 1/3 water instead of buttermilk, and added a mashed banana. They are thick but not heavy, a lot fluffier than I thought, moist and tasty. Read some of the reviews so I too added a little more sugar. I didn't have buttermilk and my husband absolutly HATES vinegar of any sort so I used some vanilla almond milk. WONDERFUL. I have always used a mix that is on the sweeter side and very tender and these came up to those standards. Lots of flavor, I didn't even need syrup. I made a double batch because it didn't look like much but I have 4 7" pancakes to freeeze after having 4 for breakfast. Just finished eating these pancakes, literally 30 seconds ago. They are pretty good, and fluffy and best of all, easy to make. I made them exactly as directed with awesome result. I didn't quite get the "butter" taste that I get from the box mixture of buttermilk, bur then again, the mixture is full of artificial flavoring so I'm ok with that, especially that this are my first made from scratch pancakes. This is a great recipe. My son, who is very picky when it comes to pancakes, totally loved them and so did I. He likes really big pancakes, so the recipe made almost 4 very large 1/2 cup pancakes. Very easy, had most of the ingredients on hand. I substituted buttermilk for 1 cup 2% milk. Batter was too runny so I added more flour to get the right consistency. I also added a little more sugar. I also added chocolate chips. They came out great! Good to know I don't need the box sold at the grocery store, there is really no big difference from this recipe and the boxed varieties sold in stores. This has been The Best pancake recipie I have ever found. I haven't really be able to find soft (not crunchy, floppy, fluffy, flavorful pancake recipies anywhere and I was tired of using "box" ingredients. I had to change and add a couple of things but they turned out great! 1st my butter milk was past the expiration date so I found out how to turn regular milk into an adequate substitute (use one cup of milk - we drink 2% - and cut a lemon in half and squeeze the juice of half a lemon into the cup of milk. 2nd Let the milk and the egg sit on the counter for a half hour before you use them. And 3rd I also added a tsp of vanilla, a tsp of cinnamon, and 2 tsp of pumpkin pie spice. These pancakes were light and fluffy and tasty!!! Although it's a good starter recipe for a jumping off point, these pancakes were way too bland for my sons and I. I even added an extra tbsp of sugar and they still weren't as sweet as I'd like them. I made these recently, and they were delicious! I did tweak the recipe though. i added more than 1 tbsp of sugar, and and added about 1 tbsp of ground cinnamon to the dry ingredients. Just tried this recipe and the pancakes came out great. I took the advice of other raters and added an extra tbs of sugar, 1 tsp vanilla, and some fresh nutmeg. I also combined white and wheat flour, and almond meal as the one cup of flour with about a tbs of quick oats to give it a healthy kick. the pancakes came out light and buttery. Great simple recipe! and makes just the right amount for my little family! I've made this a few times and made a few tweaks to suit me better. I thought they were a bit bland the first time I made them, so I used 3Tbs sugar. I only use raw sugar too and I think this makes a big difference. I mixed 2tsp vanilla extract into the melted butter before adding it to the mixture. I never buy buttermilk... what I do is put 2Tbs vinegar into a cup and fill the rest up with milk. My son has a wheat and egg allergy, I replace the flour with gluten free/ Wheat free flour. I also left out the egg. We didn't have buttermilk, so I just used milk with a few drops of white vinegar. While the pancake batter mixed into a great pouring consistency, cooked into a nice fluffy pancake, and had a great texture, they were lacking in flavor. I didn't get the buttery flavor that I usually like out of a pancake, and my husband and I thought they were pretty bland. This recipe is so easy and so tasty! I like how the melted butter is already incorporated into the batter so you don't have to mess with greasing the pan for each pancake. Not the best pancakes I have ever made. I thought they were ok. The butter taste was nice, didn't feel the need to add any to the tops when done. They were thin though. I was skeptical at first b/c there aren't many ingredients and it's just so easy. But these pancakes were AMAZING! I agree with some of the other comments that a small dash of vanilla adds great flavor. I also suggest that if you like to butter your pancakes to use salted butter and then pour over pure maple syrup. Great recipe. I used raw sugar (approx. 1-1/2 tablespoon instead of 1 tablespoon), may try honey next time. I also added 1/2 tablespoon of ground cinnamon, 1 tablespoon of Disaronno Amaretto. Used 4 bananas. Worked out nicely. My grandma was an amazing country cook. Everything she made tasted like heaven - probably a bit of nostalgia talking. But I distinctly remember her pancakes being especially delicious. Absolutely awesome! Since it's Christmas, I added a little eggnog to the batter. Had some blueberries and strawberries, reduced those into a syrup. These are delish and not heavy at all. I will never buy pancake mix again. I have searched a long time for a pancake recipe that I like. Store bought mix just never quite cut it. I stumbled across this recipe. I have a large family of 5 that loves cakes. So I doubled this recipe. If you are one to playds around with ingredients and add to your personal taste this is a great foundation recipe. I found that I had to "tweak" the consistency of the batter, by adding a little bit of water. My family like thinner cakes. I also added a bit of agave nector(or sugar) to taste and coconut extract(sometimes I will add lemon or almond). I tend to not like the baking soda/baking powder taste, so I made sure I just added a bit less, especially as I doubled this recipe! The cakes were light, fluffy and delicious! Easy to make! I followed one of the other rater's instructions and added the vanilla. I also added 1 1/2 tablespoons of butter instead of 3 tablespoons of butter. The recipe tasted great. I would like to add one additional recommendation. Usually when I make pancakes I do not flip them until the top of the batter begins to bubble. With these pancakes, I wouldn't let them bubble before I flip them. Instead, allow them to slightly/lightly brown on each side, this will cause them to be extremely light and fluffy. (vs. hard/brown and crispy.) A few of my pancakes tasted very light and cake like and those were the best in the batch. I just made these, with a few alterations. I used 1/2 whole wheat flour, and because my batter ended up being so thick, I had to add about 1/2 C more buttermilk.. until I had the consistency that I wanted/needed. I also added a small handful of coconut flakes and some chopped pecans. I served with berries on top and warmed pure maple syrup.. YUM!!!! This recipe is so simple with ingredients found in every kitchen. There's absolutely no reason to use those prepackaged pancake mixes which all have a bad after taste!! These pancakes taste great. I've also made them with 1 cup of blueberries mixed in the batter for excellent blueberry pancakes. Prefer a thinner batter, so I use 1 & 1/4 cups of butter milk. If I have it on hand, I've also made them with 1 cup of butter milk and 1/4 cup of whipping cream or half&half, for a richer taste. These pancakes were very good. I don't keep buttermilk in the house so I took a cup of milk and added about a tablespoon of lemon juice (you could also use vinegar) to curdle the milk a bit. I let it sit out for about 20 minutes and then made the pancakes. The only thing I wouldn't do again is put the pancakes in a 275 degree oven to keep them warm! That was entirely too hot and the cakes turned crispy! These come out so buttery I don't need to add butter after cooking. & they are so light and fluffy. before this recipe I couldn't mske pancakes without burning them... even with bisquick or Krusteze.
