I found this recipe on the Food Network website. I have made it numerous times, and the pancakes come out light and fluffy every time. It is a super simple recipe. I recommend this to anyone who likes pancakes.

I added bananas and nuts. The reason why I had searched for a pancake recipe was to use some of the very ripe bananas that we had on hand. I also servered the breakfast to my wife in bed. She thought it was great.

This is a perfect basic pancake recipe. No need to use boxed mix ever again. It was easily modifiable too, as I tried adding half a mashed banana and toasted coconut to the batter - for a tropical flavor. They were still light and fluffy.

I smelled too much of the eggs. It was okay.. next time I just put 1 egg instead of 2.

I always try new recipes. This pancake recipe is the best I have ever had, at home or even in a restaurant. I won't look for another recipe for pancakes again. This is a keeper. I didnt even use the buttermilk as the recipe called for as I didnt have it. I used regular milk and it was still KILLER!

I too had no buttermilk, so I added a tablespoon of apple cider vinegar to a cup of 2% milk. I also added walnuts and bananas to the batter. Oh my lord that was good eatin'!!

These pancakes were very good. I don't keep buttermilk in the house so I took a cup of milk and added about a tablespoon of lemon juice (you could also use vinegar to curdle the milk a bit. I let it sit out for about 20 minutes and then made the pancakes. The only thing I wouldn't do again is put the pancakes in a 275 degree oven to keep them warm! That was entirely too hot and the cakes turned crispy! Next time I'll either use a much lower temp oven or simply add them to a second skillet and keep it on low.
