The 3 star is for the recipe as is. ..good but not fab. Too bland. I am NOT at all fan of hot and spicy, but this recipe needs just a bit more heat and depth of flavor. 2nd time I made it I reduced chick stock even further to only 1/2 C. I doubled the green chilli peppers by mistake, which turned out great.(did 2 cans in sauce & 2 cans in meat. I added added just a 1/2 t hot sauce to the sauce. (EL PASO To the meat I added a good pinch of Emerils Mexican seasoning, a pinch of garlic powder and a pinch of cumin as/ these changes my family loved it even the kids Also the brand of canned sauce you buy changes things ALOT. OLD EL PASO is bland, whereas some brands that have green chilli peppers can be spicy. So experiment w/ types & brands. Overall this is a good recipe to start with BUT tweak to your taste

Just wanted to let some of you cooks in on one of my secrets for flour & corn tortillas, I butter each side with a bunched/folded paper towel. Just dip your paper towel into your tub & get a little out and rub each side. Put your buttered (or margarine tortilla on a low heat non-stick pan for about 10-15 seconds & flip to other side when you see them start to pump up. Then take them off & onto a plate, put a paper towel in between each one. They are delicious, soft & taste buttery. Yummy!!

These were a big hit with the family. Will definitely make again. Excellent flavor but not very spicy. Can easily be spiced up for those who prefer a bolder taste. Served with Mexican rice and Ree's Restaurant-Style Salsa.

These enchiladas were delicious. My husband loved them. They are definitely more of a "cowboy" enchilada and not authentic Mexican (or even authentic Tex-Mex. Not super spicy so great for the kiddos, too.

Delicious! My picky meat and potato husband even loved them! It just took me forever to fry the tortillas-I kept running out of the oil frying each one by one. I'm still learning how to cook, so I wasn't sure how much oil I needed to fry all the tortillas with since the recipe didn't say, but I know to add a lot more than I did next time!

Excellent taste; tedious to make! My family absolutely loved this recipe. I will definitely make again, but will dread the dipping in the sauce part because it is messy. Thanks for sharing!

Thought I'd give this recipe a try. As when prepared on TV looked delious! HOWEVER, I too, have made better Enchiladas. They were not spicy enough for myself or my husband's taste. This will not keep me from trying other recipes from Ree.
