Simple Waffles from Scratch

Ingredients
  • 3 tablespoons butter
  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons sugar
  • 1 1/2 cup milk
  • 2 eggs
Directions

Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, salt and sugar. In another bowl, beat together milk and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm

ADD A TEASPOON OF VANILLA! There is no flavor otherwise. It's a really good recipe, though. If runny, then add a spoonful or more of flour until the consistency is correct. I omit the butter because it doesn't make a difference in my waffles. item not reviewed by moderator and published

I think they turned out pretty well. I ended up using 2 cups flour, 2 cups milk, 2 teaspoons of baking powder, and a splash of vanilla extract. Everything else was the same. This made 4 large Belgian waffles and they turned out nice and fluffy and golden brown! I only gave this recipe 4 stars because they still tasted like the were missing something... My daughter wanted waffles and I was out of waffle mix, so I used this recipe instead. I did not tweak the first batch of waffles and they came out perfectly. I was a little nervous because the batter was so thin, but they still came out soft and fluffy and cooked all the way through. My guess is I have a really awesome waffle maker. I couldn't find my usual waffle recipe I've been using for years. I was attracted to this one with simple ingredients. My usual recipe had 2 cups flour and 2 cups milk with 2 eggs. This has the same 1:1 ratio of milk and flour, but less volume. This worked well for us with no leftovers for a family of four. If you want a less eggy waffle or a few more waffles, increase flour and milk to 2 cups. If you want fluffier waffles, increase baking powder to 2 or 3 teaspoons. I decided to try this recipe because at the last minute my family decided they wanted waffles, and I didn't have sour cream for my famous sour cream Belgian waffles. WORST CULINARY MISTAKE I'VE MADE IN A LONG TIME!!! The batter was extremely runny, so after the "test" waffle - let me stop here and say that I have never planned a "test" anything when I cook - I added flour and baking powder, and ended up with an almost edible product. I made this with my mom one morning because I didn't want cereal again, BIG MISTAKE!!! Not only was the recipe so easy that it had to fail, when we pulled it out it was completley raw and a waist of perfectly good ingredients. I usually use the Krusteaz waffle mix in a box, but wanted to find a cheap alternative that I can make at home. This was my first homemade waffle, and like the previous posts, it was a bit runny, but I baked it up anyway, and just had to fill the iron a bit more than usual. It turned out well, the edges were kinda weird tasting, maybe a bit eggy because they were less filled with batter, and less contact with the iron, so they cooked a bit less. We've used a Colonial Williamsburg Waffle recipe for years, but I wanted to try something new. This recipe was SUPER simple, and the waffles were delicious! I'm not an exact "measurer" so I went a touch over on my flour and a touch under on my milk (since several people had commented on the batter being runny and the consistency was perfect. I did add a about 3/4 Tbsp of Vanilla to ad some pizazz and the flavor and sweetness were wonderful. This is a fantastic basic recipe. This is going into our binder of favorite recipes . We added 1 ripe banana and some vanilla to the wet ingredients. Also used buttermilk only becuase we needed to use it up. Next time we are going to try some peanut or sun butter. Hmmm maybe even some cinnamon and sugar with some pecans or walnuts...the possibilities are endless. The beautiful aroma while baking is incredible. Thought I was settling for this recipe over other "upscale-type" waffle recipes due to a lack of other ingredients but I was pleasantly surprised! I followed the recipe exactly except I doubled it and added a little vanilla. Never again will I use a box mix and will probably be sticking to this recipe. Just as good as any waffles I've ever had in a restaurant. I've seen some complaints of the batter being runny but I didn't have that issue. I'm sure a rotating iron would help with that. This recipe is great for a quick yummy waffle from scratch. It's very simple in preparation and flavor, making it perfect to add tasty mix ins like chocolate chips or blueberries or whatever you like. Love it for hectic mornings when you still want something warm and homemade. I made this recipe and I found it to be odd that even though the ingredients were measured carefully the mix was too runny. My husband said they are the best waffles he's ever had. To me, these are good, basic waffles if you like them breadlike in the middle. They stay pretty soft. Definitely not hard and dry.
