All I can say is that the flavors of the stuffing were just a flavor in my mouth!!! This recipe is AWESOME. I like spicier food so i would definitely use more poblano peppers next time. I just LOVED it! I could eat the stuffing all by itself without the tomato. I definitely recommend this recipe.

I didn't change a thing with this recipe. It was so flavorful and delicious! You can easily use this recipe as a meal or to create an appetizer or side dish. This one is a definite keeper!

Not a big fan of stewed tomatoes...loved these spicy stuffed tomatoes so much! The chorizo gave them such great flavor. The parmesan on top gets all golden and crispy. UMM! Didn't have a poblano on hand so I used a chipotle instead. Didn't know I was out of breadcrumbs, so I used 1/4 cup of cous cous instead. They got amazing! The first time I made these it was for company. Everyone raved. I just figured out one more delicious way to use up our tomatoes from our garden! I'll be making these quite often. Thanks Ingrid!

Even my husband who will not eat vegetables, LOVED these tomatoes. I have yet to serve them to anyone and not get a fab response. Definitely a keeper

In large tomatoes this is a whole meal - in the small vine tomatoes, it is a wonderful side. The flavors are fabulous! Will make all summer!

This recipie is to die for. I have converts in both Washington & Colorado to it's great flavors. Actually like it better without the bread crumbs (have a gluteen intolerant friend & with a spicy Italian Sausage.

You could use any cheese and meat you have on hand with this. I adjusted and made this for 2, using leftover linguica sausage and manchego cheese, and did not change any of the other ingredients. My husband was happy, and he is not a tomato fan. This is in my recipe box, for sure!

I loved the filling. I'm not really into eating tomatos. But they made it look so good on tv. I thought I would surprise my guatemalan roomie with these. She loved them.
I also had a spare green bell pepper in my fridge. I put the mixture in one of those too. I had only bought 4 tomatoes. Roomie like it with the bell pepper better.
