    I made this a few weeks ago, and it was a sure fire hit! I went ahead and bought a rotisserie chicken from my local supermarket and added chipotle peppers to the chicken mixture and it gave a wonderful smoky flavor without too much spiciness. The veggies were perfect and it all came together really well. It was a bit messy, but it was completely worth the work in the kitchen. My family absolutely loved it, and we all wanted more. I'm going to make it again and plan for a few additional servings just to be on the safe side. Try it out, I'm sure you'll love it!

    This will be my fourth time making this dish, two of the times were for guests and everybody has loved it!! is a little messy but worh it. About 1 1/2 hours to make

    The flavors in this recipe are fantastic. The end product can be difficult to eat - quite messy. It can be time consuming to make, however (much more than 45 mins!, so I would recommend making the roasted red salsa ahead of time. You can probably make the chicken ahead of time as well. We've actually made the roasted red salsa on it's own for dipping and use in burritos - fantastico! Overall, this is a terrific recipe and I know it is going to become a staple in my home. Even my 3 kids loved it!

    I tried this recipe and loved it. Next time I will changed it a bit a make some picadillo and instead of roasting vegetables, I will make my own salsa, it is less messy.

    I haven't made this yet, but I am going to take a shortcut and buy a rotissiere chicken and shred it. This looks like a great recipe, but time consuming and a lot of dirty pots and pans. The precooked chicken will help and it will taste just as good I bet. If you made this salsa ahead and froze it or had it on hand then this would be easy. I'll let you know how my idea works out :

    Super delicious. Husband and kids loved this meal. Just keep in mind, this recipe takes a long time to prepare and you get the kitchen pretty messy. I will totally cook this meal again!
