My family loves salt & Vinegar chips. So when I saw this recipe of course I had to try them. Soooo easy and my whole house smelled like a bag of salt and vinegar chips. We loved them. I have always roasted potatoes with onions and they mostly burn but this time by adding them at the end they came out perfect. I made them two days ago and my family wants them again tomorrow!

I'm not sure why "chipotle" is in the title of this recipe as it's not listed in the ingredients and wasn't used on the show. Perhaps Ingrid meant to use chipotle chili powder, which isn't a bad idea at all. These potatoes really are steeped in the vinegar and oil and develop a rich flavor. I might suggest raising the oven temp to 400, just so the potatoes ccok quicker and develop a more crispy exterior at the end. Leftovers were great for breakfast with eggs the next day!

These potatoes were really good. I made them with fingerling potatoes instead of russets. I will make them again.

Where are the chipotle peppers that are listed in the recipe title? They aren't in the recipe, and she didn't use any on the show.
