Sliced Turkey and Cheddar Wrap

Ingredients
  • 1/2 small Roma tomato, cored and cut into wedges
  • Kosher salt
  • One 10-inch spinach tortilla
  • 1 to 2 teaspoons yellow mustard, optional
  • 2 slices turkey
  • 1 slice mild Cheddar
  • 2 leaves Bibb or green leaf lettuce
Directions
  • Sprinkle the tomato wedges with a pinch of salt and set aside for 5 minutes. Pat the tomato wedges dry (to avoid the wrap getting soggy). Wrap the tortilla in a barely-damp paper towel and microwave on high for 45 to 60 seconds. Spread the mustard on the tortilla, if using. Add the turkey, Cheddar, lettuce and tomatoes. Fold up the bottom quarter of the tortilla, then roll into a burrito to enclose the filling. Wrap up tightly in plastic wrap or parchment paper.
