Directions
Beat 1 1/4 cups dark brown sugar and 1 stick butter until fluffy, then beat in 1 egg and 1 teaspoon vanilla. Whisk 1 1/2 cups flour, 1/2 cup Dutch-process cocoa powder, 3/4 teaspoon salt and 3/4 teaspoon baking soda; stir into the butter mixture. Chill 30 minutes, then roll into balls and bake 12 to 15 minutes at 350 degrees. Roll finished cookies in confectioners' sugar.

These were easy to make and tasted great. The recipe was easy to follow and fun for the kids to roll the little dough balls. We made them slightly crispy on the outside and the inside was soft like a cake. I chose these because my kids love chocolate and I wanted to make some type of Christmas cookie with chocolate. This is a winner and we've added this cookie to our cookie gift trays.

These are incredibly good cookies and very easy to make. They were an instant hit! After chilling the dough I thought it might be a little too dry, however they baked up beautifully. The cookie is not overly sweet and the dusting of powedered sugar adds just the right touch.

I was able to make these cookies in under an hour, including baking time. These are seriously easy to make. First off, this recipe only makes 24 cookies, so you are only baking two sheets worth. Secondly, I used a scoop to make the balls. I had 12 of them on a cookie sheet in little more than a minute. I put some powdered sugar in a quart-size plastic bag and tossed each cookie in the bag. Easy to cover with powdered sugar that way. I baked for only 12 minutes which was plenty, rotating the cookie sheet 1/2 way through baking. But, the best and only part that really matters is that they tasted great. They are chocolaty tasting, have great texture and and are soft. I make a lot of cookies and I would make these again. And presentation is nice too.
