Soup with Carrot and Chicken

Ingredients
  • 2 cups chicken broth
  • 1 cup tomato or vegetable juice
  • 1/4 cup long grain rice
  • 1/2 boneless chicken breast, cooked and cut into 1/2 inch dice
  • Green onion, thinly sliced
Directions

Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
